ScanPro™ comes as convenient powders that can go directly into your meat recipe – either mixed into ground meat or dissolved in an injectable brine.
Essentia’s functional ingredient solutions are based on proteins derived from pork, beef or poultry. The term functional refers to their unique number of attributes that help improve the texture of meat products.
ScanPro™ is a range of clean label meat-based functional proteins manufactured using only thermal and mechanical processing, thus ensuring a natural and microbiologically stable product.
Our functional proteins are ideal for fresh and processed meats, including coarse ground, fermented, and injected whole muscle applications. The addition of these unique ingredients provides functional benefits such as purge reduction, improved sliceability, increased cook yield and improved shelf life; and allow you to replace expensive ingredients in your application, thereby reducing cost while increasing yield.
The ScanPro™ range:
ScanPro™ T – series is a range of highly functional pork proteins that can be added directly to any recipe as a clean label ingredient, delivering improved cost-in-use. These ingredients work well in injected and reformed products due to excellent gelling capabilities, promoting satisfying textures. They also possess a high water-binding capacity and can be used as a meat replacement in emulsified products.
ScanPro™ HI Premium stands as our best-in-class high functional protein, excelling in gel strength and water-binding capacity. Additionally, it has better dispersibility than many other functional ingredients.
ScanPro™ HI – series – series is specially developed for use in high-quality whole hams, bacon and whole smoked and/or cooked products. It is intended for low extension products and is suitable for low-phosphate meat products.
ScanPro™ Beef 95 – series are made from 100 % beef raw material and processed using a highly advanced technology that concentrates the beef protein through thermal and mechanical treatments. The different particle sizes in these proteins make them suitable for both ground products, emulsions and injection.
ScanPro™ FCP 90 is a chicken-based high functional protein solution for poultry applications. It is a premium ingredient available as a fine powder and can be used in injected, emulsified, and ground products to deliver several value-adding benefits.
ScanPro™ 1015 / 1020 - series is a cost-effective choice offering impressive functionality suitable for various meat products. This range comprises a number of product versions each with different levels of functionality and particle size.
ScanPro™ Beef 1100 is a range of functional proteins made from 100 % beef raw materials which are halal certified. The beef proteins can be used in meat applications as a clean label ingredient. The main difference between the two beef products is the particle size.
