Description
Latest innovation by CLEXTRAL towards the meat and fish analogs manufacturing industry, the patented High Capacity Die enables to produce high moisture meat and fish substitutes with a high quality fibration of alternative proteins providing a mouthfeel experience similar to meat and fish, whilst running the food extruder with a throughput over 1 T/h.
The High Capacity Die is composed of modules which implement each, an individual cooling circuit so as to precisely adapt the temperature profile all along the die and get the best texturation out of it
High Flexibility thanks to the possibility to change the thickness of the die outlet, enabling to make products from jerky like (6mm thick) to whole cut like (20mm thick).
Hygienic stainless steel frame with castors, movable on rails. All contact parts are made of stainless steel or food grade material to enhance the hygienic and sanitary design.
