TYPES OF CUTS
Slicing Wheels
Flat & Crinkle Slices: 0,8 to 76,2 mm (1/32 to 3"). Crinkle slices have 4-2/3 waves per inch with a
crinkle depth of 1,6 mm (1/16"). Slicing wheels can be converted to crinkle slicing by replacing the straight knives with
crinkle knives and using a different shear edge.
Julienne Wheels: Julienne cuts ranging from 12,7 x 12,7 mm (1/2 x ½”) to 50,8 x 50,8 mm (2 x 2") are produced by using julienne knives on the slicing wheel.
MicroSlice® Wheels
Flat Slices: 0,5 to 6 mm (.020 to .240")
Crinkle Slice: 1,8 mm (.069") thickness with 3-1/3 waves per inch and with a crinkle depth of 2,0 mm (.080")
Oval Shred: This shred has an oval-shaped cross section measuring approximately 3,2 mm (.125") thick by 6,4 mm (.250") wide.
Julienne Strips: A wide range of julienne strips can be made from firm products.

Urschel® M6 Dicer
The patented Urschel® Model M6 is a versatile machine designed for dicing, strip cutting, or shredding a variety of products through a wide range of sizes from product of a predetermined thickness. The machine is ideally suited for cutting frozen-tempered, fresh chilled, or hot cooked beef, pork, or poultry in addition to leafy vegetable products. The Model M6 operates continuously at high production capacities., and is designed for easy cleanup and maintenance.
Key components promote increased sanitation incorporated in an ergonomic, practical design: Hinged access panels - stainless steel motor - solid bar and angle frame design - streamlined product feed with two pivoting product guides – integrated electrical enclosure – convenient operator stop/start station.
The OPERATION PRINICPLE when DICING/STRIP CUTTING is as follows:
Product is delivered onto a high speed feed belt. This belt carries the product to the dicing unit. Product is pinched between a feed roll and the drive roll at the end of the feed belt. The feed roll, which is spring loaded and adjustable, allows product of varying thicknesses to move through the dicing unit without being crushed. Product is forced into circular knives which run in narrow grooves in the rotating feed drum. The resulting strips are then removed from the circular knives by a stripper plate which also acts as a shear edge for the crosscut knives. The stips of product move directly into the rotating crosscut knives producing cubes or rectangular pieces of predetermined size.
Types of Cuts:
Dices:
Many sizes of cuts are possible by combining the various selections of circular knife spacings with different crosscut knife spindles. Circular Knives: 3/16 to 1-1/2” (4,8 to 38 mm), Crosscut Knives: 1/8 to “ (3,2 to 76,2 mm) standard sizes, up to 5.66” (144 mm) available with alternate gearing.
Stip cuts:
Strip cuts can be made by removing the crosscut knife spindle from the machine. The length and thickness of the strips will depend upon the size of the original product.
Shreds:
Many types available. Due to variables in applications, it is highly recommended that processors work with Urschel to achieve optimum results.

Urschel® DiversaCut 2110A® Dicer
The largest machine in the DiversaCut line, the DiversaCut 2110A™ Dicer produces dices, strips, slices, granulations, and shreds at high production capacities. With a maximum infeed of 10" (254 mm) in any dimension, the machine offers cost-savings by eliminating the need to pre-cut product. This new dicer promotes more precise cut tolerances with slice adjustment and lockdown features. The machine also features fine-tuning through adjustable collars on both cutting spindles for ultimate precision. Products widely processed include: potatoes, carrots, onions, cabbage, peppers, celery, tomatoes, aloe vera, apples, cooked bacon, cooked turkey or beef roasts, candy granulations, papaya, breads, cookie granulations, ham, fish, pepperoni, squash, pet food, cassava, kohlrabi, cucumbers, eggplant, zucchini, mango, ginger, kale, leek, peaches, pineapple, and strawberries.
OPERATING PRINCIPLE
Product is delivered to a feed hopper, then enters a rotating impeller. The resulting centrifugal force holds the product against the inside of the case as the impeller paddles carry the product past the slicing knife. An adjustable case gate on the impeller case allows product to move outward across the edge of the slicing knife. The distance between the edge of the slice gate and the slicing knife edge determines the slice thickness.
As the slices emerge, they are guided between the slicing knife and stripper plate before entering circular knives where they are cut into strips. The strips pass directly into the crosscut knives which make the final cut.
TYPES OF CUTS
Slices: The machine can make a full range of slices byremoving the crosscut and circular knife spindles. Flat or crinkle slices: 1/16 to 1" (1.6 to 25.4 mm)
Dices/Granulations: A slicing knife, circular knife spindle, and crosscut knife spindle are used for dicing. Changing the dice size is done by using the required cutting spindles and adjusting the slice thickness.
Circular knife cuts: 1/8 to 3" (3.2 to 76.2 mm)
Crosscut knife cuts: 3/32 to 1-1/2" (2.4 to 38.1 mm)
Crosscut knife crinkle cuts (.076" depth): 9/32 to .583" (7.1 to 14.8 mm)
Crosscut knife deep crinkle cuts (.125" or .145" depth): 3/8 to 1/2" (9.5 to 12.7 mm)
Crosscut knife V-cuts: 5/16 to 1/2" (7.9 to 12.7 mm)
Strip cuts: Flat and crinkle strip cuts in a variety of widths can be made by removing either the crosscut knife spindle or circular knife spindle assembly.
Shreds: Fine, medium, and coarse shreds can be produced on hot or chilled cooked meat products.
