Description

The alco spiral oven ASH PRO is perfectly suited for producing steamed, cooked and roasted products in hot circulating air and/or steam. The spiral conveyor belt design allows a large effective cook zone while the space requirement is small. Large product quantities can be cooked gently in the alco spiral oven, whereby optimal color and texture are achieved and moisture losses in the product are minimized. By combining several successive spirals, different climate zones can be created and thus the optimal process for the product can be mapped. For your application we offer you, based on our standard design, machines of various sizes as well as different additional options and add-on equipment. Due to the flexible combination options, we can configure the perfect solution for you. Should your optimal solution, however, not be achievable in this way, we would be glad to develop it together with you.

alco Product Preparation Line

A high-performance product preparation line for the grinding and standardization of sausage meat and other homogeneous product masses for a wide range of end products can be individually configured from the meat grinders, conveyor systems and mixers offered by alco. alco meat grinders grind both fresh meat (up to 15 t/h up to Ø 3 mm) and frozen meat blocks at an hourly capacity of up to 6 t / h up to Ø 5 mm. At alco the top priorities are the absolute reliability of the systems, optimum cutting quality and high hygiene requirements. Ideal cutting results with maximum service life are achieved by means of multi-part cutting sets consisting of perforated disks, ring knives and pre-cutters combined with one another. The upstream twin-screw system consisting of feeding and working screw continuously conveys exactly the amount of raw material, which can also be removed from the cutting set, so that crushing of the material can be avoided. The gentle material supply ensures efficient cutting and preserves the quality of the meat. After grinding, the pre-ground products are automatically conveyed into the alco mixers by means of conveyor technology such as screws, conveyors or vertical conveyors. The conveyor line to the mixer can optionally also be used to analyse the composition of the product. Analyses such as fat, protein, water, or BEFFE are used prior to completion to optimise batch mixing, review product quality, and improve cost-effectiveness.


The ground mass is mixed in an AMP alco mixer by the mixing devices (mixing shafts) in the mixer trough of the machine. The direction of rotation of the shafts can be changed to achieve a perfect, fast thorough mixing. Depending on the application, different mixer sizes (350-1000 l) and mixer shafts, e.g. paddle, spiral or special mixing tool are available. The alco paddle mixer is particularly suitable for product-protecting, yet highly efficient, mixing to a homogeneous mass. Other equipment options include cryogenic liquefied gas or steam to reach the target temperature, as well as various liquid dosing devices. Another optional production step is mixing the products under vacuum to produce a bubble-free product of improved quality and increased protein yield. Heated or coolable mixer troughs with double walls are also available from alco.

alco convenience line

The modular concept of the alco convenience line makes available sophisticated combinations of tried-and-tested applications as well as advanced ideas. Whether classic lines, individually assembled processes or individual machines for industry and trade - from small to large capacities - alco has the solution. In addition to the perfect integration of individual machines into existing processes, the modular concept also enables the setting up of completely new, individual production lines. A classic convenience line, such as chicken nuggets, can begin by grinding, followed by mixing and standardization for the form mass. In the alco mixer, the mass is hygienically mixed with other ingredients of the recipe, such as spices or technological substances, gently and yet extremely efficiently to a homogeneous mass. The products are formed in the subsequent process step. Forming can be done by the alco forming machine AFM or different attachments which are fed via augers. The formed products can then be coated with various media such as fine flours, wet batters and breadcrumbs. The downstream frying process gives the products a crunchy, tasty breading and an appetizing look. If the products are to be marketed already well-cooked, they can be re-cooked in the oven after the fryer. The last typical process step is the cooling or freezing of the products. Here, too, a variety of options are available, from plug-in compact freezers to special freezers with special dimensions. The modular line concept, consisting of perfectly coordinated individual systems, enables the configuration of the best production process for the individual product. The flexible and modifiable systems increase the flexibility of production and enables a high variety of products.
