Your products decide the height of the side links and size of the spiral. The SingleStacker is available for product heights up to 110 mm, and belt width is available up to 1000 mm effective belt width. In- and out-feed in the same pressure zone, a unique air balance, together with wide evaporator fin spacing, enables long running time between defrosts — up to one week depending on product.

Scanico uses horizontal airflow in all our spiral systems which results in the quickest freezing time. With horizontal airflow you are independent of belt mesh density, product loading density and frost build-up, since the air skims the belt’s top and under the sides instead of going through the belt. Consequently, ventilator pressure can be reduced and energy consumption minimised. A unique air balance in the freezer and wide evaporator fin spacing enable long running time between defrosts. Depending on your product, the time between defrosts can be as long as one week.

The Scanico spiral steam cooker / pasteurizer is the perfect solution for heat treatment, cooking and thawing of a wide range of products:

Direct expanding steam and fans for effective airflow give short processing time, even temperature in the whole spiral, and a uniformly cooked product over the total belt width. The direct steam also improves yield.

The steam cooker / pasteurizer is in principle constructed in the same way as our spiral freezers with a limited number of moving parts. Electrical motors and gearbox are placed outside the insulated cabinet, and the entire drive system is adapted for the harsh environment in the steam cooker. A PLC-controlled steam valve keeps the set temperature in the cooker/ pasteurizer at an accurate level.

The insulated cabinet is with fully-welded stainless steel plates on both the in- and outside eliminating the risk of water and steam leakage and improving cleaning.

The steam cooker/ pasteurizer is available in all types of layouts and can be followed by a descending chiller or freezer in a complete in-line solution from Scanico.

The unique impingement airflow (patented) and the method used to evacuate the air in the TwinImp enable you to utilize the belt area to almost 100%, giving maximum capacity in minimum space.

The spiral proofer is the perfect solution for proofing a wide range of bakery products to different levels, such as Danish pastry, croissants and most types of dough products.

Depending on your product the proofer can be supplied with different types of steel or plastic belts. For very sensitive products the spiral can be provided with a separate “curve” loader.

By using the spiral technique, a very limited production area is needed compared to a traditional linear proofer. One of the most space-saving and production-efficient solutions for proofing and freezing, is an ascending spiral proofer connected to a descending spiral freezer.

The right proofing environment for your products is maintained through frequency controlled fans, and water or steam aggregate for humidity and temperature control. As an option a stainless steel evaporator or brine cooler can be supplied. Everything is PLC and recipe controlled with an easy-to-operate user interface.
