From its beginning, in 1999, Hiperbaric was involved in the design, production and commercialization of high pressure processing equipment. High pressure processing (HPP) is the only non-thermal preservation technology for the meat industry that meets the high-standard requirements of both consumers and manufacturers: premium quality, clean label, food safety, and extended shelf life. HPP eliminates harmful and spoilage microorganisms by holding meat products under high hydrostatic pressure (4,000-6,000 bar), reducing or eliminating the need for chemical preservatives. It maintains the original attributes of meat products for several weeks up to a few months in refrigerated conditions. Pressure transmission is uniform and instantaneous regardless of shape size, allowing the production of sliced, diced or whole meats in any type of plastic packaging.

HPP achieves several log reductions of the main meat-borne pathogens such as Salmonella spp., E.coli, Campylobacter spp. and Listeria monocytogenes. The numbers of lactic acid bacteria and other spoilage indicators are drastically lowered, extending the shelf-life of HPP meat products over two- or threefold compared to the original shelf-life. Moreover, it allows meat manufacturers to meet their Listeria 0 goals.
