Ulmer Nahrungsmittel GmbH in Ulm is a successful, family-run company that belongs to Albert Mühschlegel GmbH & Co KG, Thannhausen. Now in its 16th generation, A. Mühlschlegel Holding has been producing wheat flours and wheat semolina since 1465 and thus sustainably supplies the raw material for the production of our breadcrumbs.
We produce high-quality breadcrumbs at 3 locations in Ulm, Leipheim and Osterfeld (Saxony-Anhalt) on state-of-the-art equipment, effectively and at the highest level of production technology. We offer crispy breadcrumbs for a wide range of applications in meat, fish, vegetarian and vegan foods, cheese and breaded vegetables as well as in various baking applications.
At our new mixing plant in Teutschenthal, we continue to produce a wide range of products for simple and complex applications in the coatings sector, such as predust, batter mix, Tempura batter, mixed breading and flour breadings. These are rounded off by a range of organic products.

We also offer services in the area of product development and contract mixing.
Ulmer Nahrungsmittel is certified to IFS 7 higher level, organic, kosher and halal.
Sustainability and traceability play a major role in the selection of raw materials. Most of the wheat we use comes from German cultivation. As the wheat is milled in the immediate vicinity of our breadcrumb production sites, short lead times and transport routes are guaranteed. We deliver certain items with our own modern fleet of lorries.
