The mixing system for brine MENOZZI MM 350-3000 dissolves in water salt, sugar, starches, oils, gums, spices etc. without foaming. All ingredients are easily loaded in the hopper thanks to the sack-chute and thanks to the large waist the hopper is provided with.By starting the pump the ingredients are efficiently mixed in a short time and form a perfectly homogeneous and emulsified brine. The prepared brines remain than suspended because of the action of the pump (regulated by a timer) that re-circulates the brine and, at the end, transfers it to the injector or to the storage tanks.

Menozzi High Shear Mixers MM-ATOM 1000-3000 are employed to produce viscous emulsions , that is to dissolve in water ingredients such as: starches, proteins, pectines, karrageen and caseinesinates or for the preparation of saturated brines.The vertical centrifugal pump is seated directly under the hopper. The mixing chamber of the pump is provided with a grid that acts as a crushing mill and as a high speed mixer.This high shear pump pushes the products through the grid, that breaks any smallest part of each ingredient. so that also the most difficult ones are micronized and dissolved. Also the thickest brines become homogeneous and impalpable, without any lump.The brine is much more stable and It sediments very slowly. This brings a huge advantage in the injection phase and to the quality of the final product. Further to this, mixing time to prepare brine is remarkably shorter. The capacity of mixing and dissolving the ingredients of this machine is so high that it is used in confectionary, to prepare creams or viscous and dense thicky emulsions.

The new series of MENOZZI VACUUM TUMBLERS has been improved to achieve even higher quality and efficiency standards.

 APPLICATIONS AND PERFORMANCES
The particular “spoon shape” of the internal fins and their inclination, together with the vacuum (continuous or pulsed) system activates an osmotic massage that ensures a homogeneous absorption of the ingredients into the meat also with short massaging time. This reduces the stress of the product and its consequent increment of temperature.
The versatility of the massaging system allows to obtain the best results of processing with different kinds of meat, whether they are whole or in pieces, to be treated with injected solutions or dry salt.

PROGRAMMING PARAMETERS
The software allows to memorize 32 recipes, each one consisting of 4 processing phases and customizable with the following parameters:

• Time of massage
• Time of pause
• Vacuum time

LOADING AND UNLOADING
The machine can be loaded

• By tilting-lifter for 200/300l trolleys or for bigger bins
• By conveyor belts

The unloading is obtained by the gradual and controlled tilting of the drum , avoiding sudden fall of product and loss of liquid.

CLEANING AND SANITIZING

• The maximum tilt angle reached by the tumbler permits the liquids to flow away very well, that allows an  effective washing avoiding stagnation of residuals.
• The internal surface of the drum is easily and totally accessible from the exterior for inspection, cleaning and microbiological sanitation
• The quick release protection panels allow the operator to access the machine  within a few seconds for clearing and routine maintenance.

The experience of Menozzi company in the production of RACKS, both hanging for twin rail conveying system and standing on the floor, has allowed us to build solid racks of large dimensions to be used with AGV (Automated Guided Vehicle) handling systems.
Racks for AGV are also customized, however they can be summarized in the following versions:

The MENOZZI TTM-200/300, the tumbler -Mixer for 200/300 liter standard trolley, is the ideal solution to massage, marinate and mix small quantities of product directly inside trolleys, without using loaders. TTM-200/300 optimizes the processing times and it drastically reduces the production waste generated by the transfer of product.

APPLICATIONS AND PERFORMANCES

TTM-200/300 optimizes the processing times and it drastically reduces the production waste generated by the transfer of product. Thanks to interchangeable mixing blades, TTM-200/300 can be employed for the following uses:

• • Massage of injected meats
• • Meat marination with liquid brines and flavors
• • Meat marination with dry salt and mixture of spices and herbs
• • Preparation of dry mixture of spices (salt, pepper, other spices and herbs)
• • Preparation of legumes mixtures
• • Preparation of cereal salads

Setting the recipe parameters and choosing the shape of the mixing blade, the operator can obtain a gentle or vigorous massage and meet any production need. The orbital massage guarantees a homogeneous blending with very short cycle times, this reduces the mechanical stress and eliminate the risk of damaging also the most tender products.

The machine is equipped with a vacuum pump connected to the mixing chamber by a flexible pipe provided with a quick coupling, easy to plug and unplug. Once the preset vacuum degree is reached, the operator just closes the valve, positioned on the top of the bowl and unplug the quick coupling, before starting the processing cycle.

When the working cycle is finished, just remove the trolley and the machine is ready for the next one.
