Today, you can not imagine a modern industrial kitchen without the tilting frying pan. In the field of food processing, the tilting frying pan which has been developed by Berief especially for industrial use, has maintained its constant position. Ideally suited for roasting meat, cooking and stewing vegetables and other foodstuffs, the tilting frying pan is flexible, especially in the processing of small batches. The pan is equipped with an electrical heating system. The heating bars are mounted inside a double shell which is filled with thermal oil. This allows an even heat distribution and also a high capacity of the heat accumulator which eliminates a drop of temperature in the pan intensifying the roasting process.

The continuous contact belt grill type DUBRA (Teflon®-belt grill) points the way to roasting processes with regard to healthy food and highest quality. Due to the simultaneous contact roasting from both sides between two stainless steel platens heated by thermal oil by using Teflon® belts, additional cooking fats or oils can be eliminated. The visual effect of the roasted products is similar to a pan-made product. With this machine, products can either be only browned on the one hand but also be be browned and roasted completely. Also a roasting process without browning is possible. A gentle and taste-intensive processing of the product with minor roasting loss is one of the main features of this Teflon® belt grill.

The continuous industrial wok type ContiWok allows the roasting and cooking of products in a horizontal roasting drum while the inner wall as the roasting surface is continuously kept at the pre-selected roasting temperature. The food products which are transferred into the drum are permanently turned by rotation of the horizontal axis. This movement is additionally supported by an agitator. Cooking oil as roasting fat is dosed at the drum infeed. The advantage is a fast frying to seal of products in order to develop a roasting taste by minimizing at the same time product losses. The products to be processed can either be pre-cooked or raw.

An essential success factor for industrial kitchens is the efficient flexibility, especially when smaller batches have to be produced. Therefore it is often not recommended especially in the ready meal sector to use continuous systems. The cooking kettle with slewing basket type HODAKO-S offers the possibility to blanch or cook smaller batches quickly and economically. The very fast heating behaviour offers the required flexibility in a kitchen. This is achieved by the heating with high-pressure steam. Due to a cascade arrangement of several kettles, a cooking-cooling process can be realised, one kettle being used as cooking kettle and the others a cooling kettle. The cooling is made directly with fresh and/or cooled water. The kettle is emptied into standard bins.

Since its introduction on the market as a universal cooking machine more than 30 years ago, it is hard to imagine the industrial production of ready meals and convenience products without the tilting cooking kettle type KIPPKO. Due to the heating with steam up to 10 bar, roasting processes can be made in the kettle which give the dish the typical taste. The horizontal agitator system with Teflon® wall scrapers allow an intensive but also gentle stirring process also at low filling degrees of the kettle (for example searing and browning of onions) and eliminates burn-on.
